While what type of tofu to use is pretty flexible, I prefer the firm variety that comes in a tub. Extra-firm works well, too. Make sure to drain or press well ahead of time. Using a tofu press is ideal!

What about silken tofu? Firm or Extra-firm silken tofu that comes in the asceptic packages works nicely, but since the packages have been reduced to 10.9 ounces (until fairly recently they were 12.3 ounces), just be aware that it leaves you with less tofu per serving. Don’t use the kind of silken tofu that comes in tubs; it’s simply too soft and mushy.
