Welcome the weekend with these easy vegan breakfast burritos, filled generously with crumbled plant-based sausage patties (the kind you buy or make yourself) and salsa-flavored scrambled tofu.
While these are fantastic for breakfast or brunch, there’s no reason why you couldn’t serve them for a satisfying lunch or fun breakfast-for-dinner.
Vegan breakfast sausage brands (& a DIY recipe)
For this use, plant-based sausage patties are preferable to the link variety, since they crumble nicely. But if you have the link variety on hand, I suppose you could chop them finely by hand or pulse in a food processor until very finely chopped. Here are a few brands of vegan sausage patties:

What to serve with vegan breakfast burritos
For a simple meal, serve these vegan breakfast burritos (those with larger appetites could probably handle two) with fruit in season and pass around extra salsa. For a larger meal, add any kind of simple salad and/or a potato dish. Easy Hash Brown Potatoes are a great accompaniment for brunch or dinner.

Vegan Breakfast Burritos with Plant-Based Sausage and Tofu
Welcome the weekend with these easy vegan breakfast burritos, filled generously with crumbled plant-based sausage patties (the kind you buy or make yourself) and salsa-flavored scrambled tofu.
Ingredients
- 14- to 16-ounce tub firm or extra-firm tofu
- 2 tablespoons olive oil or vegan butter
- 7- to 8-ounce package vegan breakfast sausage patties, crumbled (see Note for brands and a link to homemade tempeh sausage patties)
- 1 cup salsa, your favorite variety
- 1/2 teaspoon curry powder
- 2 scallions, thinly sliced
- 1 1/2 cups vegan cheddar or pepper jack cheese shreds
- Baby spinach leaves and/or cilantro, optional
- Six 10- inch soft flour tortillas
Instructions
- Drain the tofu and cut into 6 slabs. Blot well between layers of paper towel or clean tea towel (or, if you have a tofu press, press the tofu ahead of time. Cut the slabs into ½-inch dice and set aside.
- Heat the oil in a medium skillet. Cook the crumbled sausage over medium-high until lightly browned, stirring often. Remove to a bowl and cover.
- Heat the remaining oil in the same skillet. Add the tofu, salsa, curry powder, and scallions. Cook over medium heat for 3 to 4 minutes, until well heated through (turn the heat up and cook a little longer if there’s liquid in the skillet that needs to evaporate). Stir in the cheese and remove from the heat.
- Divide the scrambled tofu mixture between the tortillas, arranging it the center of each in an oblong shape, leaving room at each end.
- Divide the sausage between the tortillas, arranging it next to the tofu mixture. If you’d like a little something green in your breakfast burrito, add a handful of spinach leaves or a sprinkling of cilantro (or both) over the tofu and sausage before rolling up.
- Fold two ends over the tofu mixture, then roll up the rest. Repeat with each burrito. Cut the burritos in half to serve, if you’d like, or leave them intact. Either way, serve at once.
