This gorgeous layered mango or peach and berry smoothie can be made year round, but you’ll enjoy it most as warm-weather refreshment. In midsummer, it’s heavenly with lush peaches (nectarines work too, of course) or mango and raspberries.

The bottom layer, which you’ll make first, can be made with fresh mango or peaches (or nectarines for that matter). When these fruits aren’t available perfectly ripe and lush, feel free to use frozen.
Plant-based vanilla ice cream or yogurt gives the bottom layer a bit of heft to support the berry layer, not to mention adding a yum factor.
Likewise, the berry layer can be made with fresh fruit in season — a combination of blueberries and strawberries is ideal. This gorgeous beverage is nearly as good made with frozen berries, when the fresh fruits aren’t in season.

Where all fresh fresh fruit is concerned, especially for the bottom layer, make sure it’s lush and sweet — not the kind of rock-hard peaches or mangos that eventually ripen into tasteless mush!

Layered Mango or Peach and Berry Smoothie
This gorgeous layered mango or peach and berry smoothie can be made year round, but you’ll enjoy it most as warm-weather refreshment.
Ingredients
Bottom layer
- 2 cups diced fresh or frozen (mostly thawed) mango, peaches, or nectarine
- 1 1/2 cups orange juice or mango nectar
- 1/2 cup vegan vanilla ice cream or coconut or almond yogurt
Top layer
- 1 1/2 cups fresh or frozen (mostly thawed) blueberries, hulled strawberries (halved), raspberries, or a combination
- 1 cup orange juice or mango nectar
- 1/2 cup vegan vanilla ice cream or coconut or almond yogurt
Garnish (either or both, optional)
- Chia, sesame, or hemp seeds
- Fresh mint leaves
Instructions
- Combine the ingredients for the bottom layer in a blender and process until completely smooth.
- Divide between 4 tumblers or 3 taller glasses. If the mixture is a bit thick for pouring, stir in a little more juice.
- Combine the ingredients for the top layer in the blender and process until completely smooth. Once again, add a little more juice if too thick to pour.
- Pour over the top of the mango or peach nectar in each glass, use either or both of the optional garnishes, and serve at once.
