Inspired by the nostalgic ice cream treat, this cantaloupe creamsicle shake is dairy-free and such a refreshing midsummer beverage. Get a dose of vitamin C and beta-carotene from cantaloupe and orange in an intensely delicious creamsicle ice cream shake.
Of course, this uses vegan vanilla ice cream. It’s luscious enough to serve as dessert and might just become a summer favorite. Here’s the thing about cantaloupe — there’s a short season when it’s at its peak of flavor, and that would be midsummer. But even then, you don’t always know what you’re getting.
The beauty of this beverage is that it’s fantastic with summer’s ripest, lushes cantaloupes, but it’s also good with those “oops” melons — the ones you cut into that are just underripe or don’t have the best flavor. Blended with OJ and ice cream, it’s better to use them up than have them languish in the fridge!
- 2 cups peeled and diced ripe cantaloupe
- 1 to 1 1/2 cups orange juice
- 1 cup vanilla nondairy ice cream
Combine all the ingredients in a blender and process until smoothly pureed.
Adjust consistency with more juice if desired. Serve at once in tall glasses.
