Stir-Fried Broccoli with Shiitake Mushrooms & Cashews
Stir-fried broccoli with shiitake mushrooms, embellished with cashews and carrots is a delectable side dish that can be served on its own or over hot cooked rice or noodles.
Ingredients
- 1 tablespoon dark sesame oil or neutral vegetable oil
- 2 to 3 cloves garlic, minced
- 1/3 cup teriyaki sauce (a thick bottled variety or homemade (see link in notes), plus more as needed)
- 7 to 8 heaping cups bite-size broccoli florets (from 2 good-sized crowns)
- 6 ounces shiitake mushrooms, left whole if small; stemmed and sliced if large
- 1 cup grated carrot (pre-grated is handy)
- 2/3 cup toasted cashews or 1/2 cup cashew pieces
- Freshly ground pepper to taste
- Sesame seeds as desired
- Hot cooked rice or noodles, optional
Instructions
- Heat the sesame oil in a stir-fry pan. Add the garlic and sauté over low heat for a minute or so.
- Add the wine (or water), soy sauce, and sugar. Turn the heat to medium-high and add the broccoli, shiitakes, and carrots. Stir quickly to coat. Stir-fry until just tender-crisp, about 5 to 7 minutes.
- Stir in the cashews, then add a few grindings of pepper and a sprinkling of sesame seeds. Taste to see if you'd like to finish with another drizzle of whatever sauce you're using (or you can pass it around at the table).
- Serve at once on its own or over hot cooked rice or noodles.
