These biscuits are great for breakfast or with coffee, tea, or hot cocoa. This recipe makes about a dozen; or slightly more if making smaller biscuits.
Optional nuts: Use walnuts or pecans for extra crunch and flavor, though these are entirely optional.

This simple recipe for sweet potato biscuits needs only a few ingredients, most of which you’re may already have on hand:
- Sweet potato (1 medium, about 8 ounces)
- Light spelt, einkorn, or whole wheat pastry flour
- Baking powder
- Salt
- Vegan butter
- Maple syrup
- Walnuts or pecans (optonal)

Vegan Sweet Potato Biscuits
Vegan sweet potato walnut biscuits are the perfect companion to serve with hearty vegetable or bean stews, and chili. They're also great for breakfast or as a snack with coffee, tea, and hot cocoa.
Ingredients
- 1 medium sweet potato (about 8 ounces)
- 2 1/3 cups light spelt, einkorn, or whole wheat pastry flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 cup vegan butter
- 1/4 cup maple syrup
- 1/2 cup coarsely chopped walnuts or pecans
Instructions
- Bake or microwave the sweet potato until tender. When cool enough to handle, peel it and cut into large chunks. Place on a plate and mash it well.
- Preheat the oven to 375º F.
- Combine the flour, baking powder, and salt in a food processor fitted with either the metal blade or the dough blade. Pulse on and off a few times.
- Add the vegan butter and pulse on and off until it is evenly distributed in the flour.
- Add the sweet potato and drizzle in the maple syrup, Process just until the mixture holds together as a soft dough. Add the nuts and pulse on and off until they are evenly distributed in the dough.
- Remove the dough from the food processor and transfer to a floured board. If the dough is sticky, work a little more flour into it. If it’s not sticky, it’s good to go. Either way, don’t handle it too much.
- Line a baking sheet with parchment paper. With floured hands, pinch off sections of the dough to form 1 1/2 to 2-inch balls. Flatten lightly and arrange in rows on the baking sheet.
- Place on the center rack in the oven and bake for 12 to 15 minutes, or until a knife inserted into the center of one tests clean, and the bottoms are very lightly browned. Transfer the biscuits to a plate and serve warm.
