Here’s a slew of vegan pasta salads you can enjoy all year round. These recipes are especially welcome in warmer weather, when you can serve them with grilled veggies, vegan burgers (or other plant proteins), and other summer foods.

Pasta salads embellished with fresh ingredients are easy to make and versatile to use. A mainstay for warm-weather meals, they can serve as main dishes for warm-weather meals.

Pack up leftovers: Pasta salad leftovers are ideal to pack into containers for school or office lunch the next day, and are also ideal for picnics and potlucks.

How long does pasta salad last? Like most freshly made foods, the sooner it’s eaten, the better it tastes. Let’s give pasta salads up to three days in the refrigerator. Leftovers may get a bit dry, as pasta tends to absorb dressing quickly, so refresh your pasta salads with a bit more of the dressing used to make them.
