This simple salad is perfect for cooler months when leafy tomato salads are less enticing. It’s a perfect partner for comforting casseroles.

Easy Broccoli Cranberry Salad with Yellow Peppers
Embellished with yellow bell peppers and dressed in sesame-ginger salad dressing (bottled or homemade), this broccoli cranberry salad is offbeat, colorful, and quick.
Ingredients
- 4 heaping cups broccoli florets
- 1 medium yellow bell pepper
- 1/4 cup slivered or sliced almonds, lightly toasted on a dry skillet
- 1/2 cup dried cranberries
- 1/4 cup Sesame-Ginger Salad Dressing, or more, as needed (bottled or Homemade; see link in Notes)
- Salt and freshly ground pepper to taste
Instructions
- Steam the broccoli florets until just bright green and tender-crisp. Drain and rinse under cool water until at room temperature.
- Combine with the remaining ingredients in a serving container, toss well, and serve. Pass around extra dressing for individual servings.
