These parfaits are as welcome for breakfast as they are for serving as desserts and a good way to get kids (or the generally finicky) to eat more fruit.

Swap in vegan ice cream: Make these parfaits even more of a dessert by swapping in vanilla vegan ice cream for the yogurt; nothing else changes.
Combinations for vegan fruit parfaits
For four parfaits, you can generally figure on using 2 cups of fruit. Try the following combinations or come up with your own. Parfaits somehow call for more summery fruits, so in the cooler seasons, feel free to use the frozen versions of the following fruits (thawed, of course)
- Strawberries: Remove the hulls from 1 pint of very sweet, ripe strawberries and slice them.
- Mixed berries: Combine 1 cup of strawberries, hulled and sliced, with 1 cup fresh blueberries.
- Peaches or nectarines with berries: Combine 1 cup diced ripe peach or nectarine, with 1 cup of berries of your choice — raspberries, blueberries, blackberries, strawberries.
- Mango and berries or banana: Combine 1 cup diced mango with 1 cup blueberries, raspberries, or sliced strawberries., or 1 cup thinly sliced banana.

Easy Vegan Fruit Parfaits (with plant-based yogurt)
This fruity vegan parfait recipe is so simple that you hardly need a step-by-step at all! Layering vegan parfaits with plant-based yogurts with seasonal fruits takes almost no effort, resulting in a treat that looks as appealing as it tastes.
Ingredients
- 2 to 2 1/2 cups vanilla vegan yogurt (coconut, cashew, almond, etc.)
- Two cups fresh fruit (see suggestions in Notes or above recipe box)
For topping (use any or all)
- Shaved semi-sweet vegan chocolate or chocolate chips
- Toasted sliced almonds
- Granola
Instructions
- Use 4 parfait dishes if you have them; if not, medium-sized glass tumblers will do. For each serving, layer 1/4 to 1/3 cup each of yogurt and fruit in the parfait dish; repeat each layer, then do the same for the other three parfaits.
- Sprinkle with the toppings of choice and serve right away.
