Classic Carrot and Raisin Salad with Apple

Ingredients
- 8 ounces carrots, peeled (or the equivalent of baby carrots)
- 1 sweet or tart crisp apple (Honeycrisp, Fuji, Gala, Granny Smith), peeled, cored, and cut into chunks
- 2 tablespoon lemon juice, or to taste
- 2 tablespoon maple syrup or agave, or to taste
- 1/2 cup raisins
- Pinch of cinnamon
Instructions
- Use a food processor or mini-prep fitted with the grating blade to grate the carrots.
- Do the same with the apple chunks.
- Combine the grated carrots and apples with the remaining ingredients in a serving bowl and stir together. Let stand for 10 minutes.
- Taste the salad, and add more lemon juice and/or syrup to your taste, then serve.
