Lemon Poppy Blueberry Muffins

There are lemon blueberry muffins, and there are also lemon poppy muffins. Why choose? You can take two classic muffin recipes and overlap them to make vegan lemon poppy blueberry muffins. These muffins are fantastic with fresh blueberries (when they’re in season), but you can make them all year round with frozen blueberries (preferably organic).

I like to use smaller wild blueberries if using frozen; the regular-size frozen blueberries tend to get mushy and will bleed into your muffins even more than the ones I used here. Either way, frozen berries make the muffins a bit purple, or perhaps lavender, but no matter — they taste fantastic.

Pasta alla Norma is one of those great classic Italian dishes that’s simple to make and hugely satisfying to eat. Flavored with plenty of eggplant, onion, and garlic, it’s on the table pretty quickly, too. In the time it takes to boil the water and cook the pasta, the sauce is started and finished.

There are quite enough vegan Buffalo cauliflower wings recipes floating around. But I enjoy this mash-up of flavors so much that I’ve transposed them into this hearty Buffalo cauliflower chickpea salad.

Okay, you know the drill on Buffalo anything — a special hot sauce (most often, Frank’s) envelopes something chewy and is served with cooling, contrasting ranch or bleu cheese dressing and raw carrots and celery. In the vegan world, either tofu or cauliflower have been swapped in for wings, and the dressing is dairy free.
